CULINARY SERIES: GET TO KNOW CHEF ADAM PAWLAK

A well-known fan-favorite on Season 19 of Gordon Ramsay’s Hell’s Kitchen, Chef Adam has gone on to receive Milwaukee’s Best Chef honors in 2019, 2020, 2021, and 2022. His innate culinary creativity, imagination, and ingenuity have fueled his rapid ascent as a nationally recognized chef. His unique ability to fuse extremely contemporary spins on a diverse array of both classic and modern concepts has made his restaurant’s must-visits in the greater Milwaukee area. His passion for the culinary arts began at an early age, and ever since @adam­_pawlak23 has shared his love of food, creativity, and imaginative vision while building his brand and entrepreneurial successes. He owns two extremely popular, highly-rated Milwaukee restaurants—Egg & Flour Pasta Bar and Egg & Flour Bay View.

As noted, Chef Adam gained a significant following on season 19 of Hell’s Kitchen. In fact, it was just five days after filming ended that he opened his first restaurant in Milwaukee. In 2022, Chef Adam partnered with Omnivore to consult our clients on a variety of needs — from culinary and social media strategies to recipe ideation and much more.

Recently, I was able to steal Chef Adam away from his countless responsibilities for a quick sit-down to discover what drives his endless passion for creating some of the most sought-after cuisines in the Milwaukee restaurant scene.

Q: How do you describe your overall cooking philosophy?

Chef Adam: Growing up in an Italian family jump-started my love of food and cooking from a very young age. My specialty is high-end Italian cuisine with a lot of French influences. By working in different cities and traveling often, I’ve learned techniques and influences from around the country. My overall cooking philosophy is keeping things simple. Seasonal ingredients are so good on their own that they don’t need to be changed a lot to be amazing. Treating the ingredients and the food with respect and class really takes my dishes to the next level. I like to put modern twists and spins on classic staples and flavor combinations. If it’s not broken, don’t try to fix it.

Q: Where do you look for inspiration when ideating new recipes?

Chef Adam: I look to trends and chefs that I follow around the city, country, and world. I find inspiration from the food that I get to eat. I like to come up with dishes that are classic and notable but also elevate them and make them my own. Watching other social platforms and seeing what other chefs and restaurants are doing gives me inspiration and ideas for new food concepts.

Q: Any 2023 trends you’re excited about and why?

Chef Adam: One big trend happening in 2023 is pizza. I am excited because it is going in all directions. New attention to such a classic, beloved food has opened my eyes to new possibilities in the pizza world. Different doughs, ingredients, cooking techniques, and ways of presenting them are really breaking out in the industry and I’m excited to be a part of it all.

Q: What is the signature dish you love creating?

Chef Adam: My signature dish would have to be fresh handmade stuffed pasta. There are hundreds of different combinations and flavor profiles to incorporate but making the dough from start to finish is what I enjoy the most. Creating an amazing flavorful filling to go inside soft pillows of pasta, accompanied with the perfect sauce is an unmatched dish that can be served as a starter, second course, or main entrée.

Chef Adam leads a team of four additional culinary experts—from a health-centric Chef to a tenured Executive Pastry Chef as well as a noted Barista/Mixologist and an experienced Barista. Each member of our culinary team provides their individual expertise and unique experiences within the food and beverage industry and continues to play a pivotal role in both our menu concepting and recipe development.
